Here is a great recipe that can be made in minutes and eaten as a treat. Take them to work for that mid afternoon slump or drop them in the kids lunchboxes. You can experiment with changing any of the ingredients with other dried goods. They are yum and have probiotics in them to keep your gut healthy!
1 cup almonds
1 cup walnuts
1 cup medjool dates
½ cup dried apricots
2 tablespoons flax almond meal
1 tablespoon sunflower seeds
1 tablespoon cacao nibs
3 tablespoons chia seeds
3 tablespoons coconut oil (melted but not hot)
5 sachets of Gutsy Coconut Probiotic Sachets dissolved in ¼ cup of cold water.
½ cup of shredded coconut
Add all dry ingredients except shredded coconut to a food processor and blend for about 45 seconds, or until ingredients are finely chopped. Add Gutsy dissolved in water and the coconut oil and blend for a further 30 seconds.
Chop shredded coconut using a mini processor or do it the old fashion way with a knife to make the coconut finer, it gives a better coating. Or if you prefer it more rustic leave it as is.
Scoop a large teaspoon of mixture and roll in your hands to form small balls and then roll in the shredded coconut.
Eat them now or store them in the fridge, they can even be frozen if you really want them to last.
